Opened in 1985 by founder Tatsuo Aoki, Popeye matters because it normalized what Japan's old tied-house beer culture used to resist: multiple breweries on one bar and serious keg management as its own craft. The room still feels like a working beer hall, not a shrine—dark timber, chalkboards, projector, dense table layout, and a back wall loaded with taps, with around 70 beers usually pouring from a 100-tap system. Their in-house term "cellarman" is not theater. Staff tune gas, glass, haze, and temperature keg by keg. Do not show up to tick names. Let them steer your first pour, then use the happy-hour side dishes, sausages, or snake potato chips to keep the pace under control.
