A limited-release sour saison brewed with pesticide-free green plums (aoume) from Iki Island's historic Hirayama Ryokan, combined with white koji — a hallmark of ISLAND BREWERY. Lactic acid bacteria are not used; instead, the bright acidity comes from the plums and white koji, layered over a dry, spicy saison yeast character. The result is a refreshing, food-friendly beer with clean acidity and a light body.
