The beer arm of Ogawa Coffee's sprawling Takanawa laboratory, built into NEWoMan's MIMURE food hall - a bright, glass-walled brewhouse where you watch the fermentation tanks work while you drink. Five stools at the counter; the rest is shared food-hall seating, so it hums rather than broods. LA-born brewer Gregory Beck runs the kettles and speaks fluent Japanese and English - take a counter seat and ask him what's fermenting. The house pours run numbered, no.00 through no.04; start with the no.00 FIRST SIP West Coast IPA, then work down to the Amber Ale. Weekends open at eleven; twenty styles is the eventual goal.
