Run by Shimokitazawa’s Bistro Eureka, CANON is a brewpub built on a bistro rule: beer should sit next to food, not shout over it. The core lineup is styles-as-names (Pilsner, White, Amber Ale, Stout, Saison, Earl Grey), poured in two sizes; mediums land around ¥900–¥1,000. The room is small but not precious—white walls, brass taps, a few tables, and tanks in sight so you remember where the beer comes from. They also keep glass wine (¥1,200+) for people who want a reset. The name nods to ‘le canon’ in wine talk: the quick first pour—do that, then move on. In summer, look for batches using their Hokuto-grown hops.
