Opened in May 2019 after brewer-owner Daisuke Furusawa secured his license the month before, Folkways took over a former binding workshop in a back lane near Kiba Park and kept the room spare: concrete floor, long wood counter, tanks visible behind glass. The tap list usually runs eight lines, split roughly between house beer and guest kegs, often with a U.S. lean. Furusawa's stated aim is not palate fatigue. He brews beer meant to stay clear, steady, and drinkable through the second pint, which is why the best move is simple. Drink the house pale or IPA first, then use the light snacks to keep the pace honest.
