Hatagaya Thai-and-craft-beer diner opened February 2020 by Hitoshi Nakayama, a former backpacker who logged seven years across Baird Brewing's Harajuku and Nakameguro taprooms (four as Nakameguro manager) before going solo. 14 tsubo, 21 seats, five-meter ceilings, full-glass frontage; concrete and white-oak interior stripped to the bones and rebuilt around a proper charcoal grill. Menu uses Thai names only, no photos—Nakayama wants the staff to talk to you. Six rotating Japanese craft taps poured against Nakayama-built pairings: Daisen chicken gai yang, crying tiger beef, mu ping skewers, khao yam southern rice bowls, som tum, nam tok mu. Direct-imported Thai herbs and an original Thai-sour list. Dog-friendly. Closed Tuesdays.
