Opened December 18, 2021 as a beer bar, roughly ten minutes south of Hibarigaoka Station opposite OK supermarket. The owner trained at Asakusa's Campion Ale (the now-closed cask ale stalwart) and a handful of other beer outposts before going solo. The 'Cave' is literal: an L-shaped slim room with the brewing tanks visible behind glass at the front, three two-tops, two four-tops, plus a high-counter standing strip. After two and a half years of waiting on permits, he secured Nishi-Tokyo City's first brewing license in May 2024 and dropped the first house batch under the West Tokyo Brewing label. Six taps run mostly house with rotating guests like Uchu Brewing. Lunch leans Thai green curry and garlic shrimp; dinner snacks include bacon potato salad, house pickles, sausages, tortilla chips and dip. Growler takeaway available. Closed Tuesdays.
