Down in the B1 warren of the New Shinbashi Building — that concrete monument to salaryman drinking — sits a 15-seat counter-and-table room, tighter and more considered than its dive surroundings suggest (the interior's by soto design office). Craft beer runs against molten raclette: five-plus rotating Japanese microbrews — Yona Yona, Hitachino Nest, Spring Valley. The move is a 700-yen local pour with cheese scraped over potatoes or penne gratin. No otoshi, no table charge, cards fine. Take a counter seat solo; tables fill with after-work groups. Go early before the volume climbs. Cheese and beer without ceremony, which is the point.
