Opened as a Mejiro brewing-and-tasting room around 2021, Inkhorn is run like a lab: clean lines, visible tanks, and a short draft list that turns fast. Founder/brewer Nakade builds a core of hop-forward beers and seasonal experiments rather than chasing “safe” classics. The house rules are the tell—strict no-smoking (even stepping out to smoke is frowned on), no soft drinks, and they’d rather you bring your own water and food (skip anything pungent) than clutter the bar with menus. They even ask you not to post Tabelog reviews. Pay-at-the-counter, coffee-shop style. Come early, order halves, then grab cans and leave the counter clear.
