Japan's first Czech Specials–certified restaurant and the only bar in the country with a permanent Budvar tap. The bartender is a Pilsner Urquell-licensed 'Tap Star' who trained and passed the exam in Plzeň—he'll pour five different ways if you ask (Hladinka for balance, Mlíko for a glass of pure foam, Šnyt for the half-pour). Czech kegs arrive by air freight. Chef Tsukamoto trained at two restaurants in the Czech Republic and bakes her own bread daily for the goulash dumplings. Order the tatarák with fried topinky—rub the garlic on yourself—and don't skip the medovník. 23 seats. Closed Mondays.
