Direct outpost of Akatsuki Brewery, Japan's only certified-organic craft brewery, run by Izumi Okabe's design-and-branding firm Taikyokusha. The brewery began in Setagaya Kyodo in 2016 and built its main factory in 2020 in Hachimantai, Iwate, using geothermal energy and Kanazawa-Shimizu spring water (one of Japan's 100 famous waters). This is the second flagship taps location (opened April 2019, after Ginza), with around 11 taps pouring the Dragon Eye series and Tokyo Lab one-offs. The room is dark wood, lattice, and an irori hearth, with Hanamaki kokeshi on display. Food is robata over charcoal: Sanriku oysters, JAS-organic chicken, Iwate pork bacon, koji-cured fish. ¥660 table charge.
