A basement room off Shinjuku-dori running 75 seats and ten taps of Japanese craft: Hitachino Nest, COEDO, Sanktgallen, Echigo, pouring in R and S sizes. The kitchen is straight yoshoku: beef stew, seafood carpaccio, meat-sauce spaghetti, domestic beef off the grill. Lighting is warm, the room runs loud once the after-work tables fill, so this is a group play, not a quiet one. The move: build a flight across the taps, then anchor it with the beef stew. Once carried the Nikko Kanaya Hotel name, now run by DD Holdings; expect a 550 yen charge and 5 percent service. Come at lunch for the quieter version.
