Opened on 24 May 2023, Canal brewing is owner Megumi Hamaguchi's Oimachi project: a 15-person standing room built after years of drinking more than 2,000 craft beers annually and getting converted in Los Angeles. The point is Japanese beer, not import flex. Hamaguchi selects taps with a brewer's eye, contract-brews his own beer while hunting for a permanent brewery site, and keeps the room tied to the neighborhood with pizza days, game nights, and collaborations with nearby sento Suehiro-yu. Physically it is a slim grey box with taps in full view and fridge stock under the counter. Drink draft first. The cans are for takeaway, or for later when the tap list has already done its work.
