Basement brewpub in Ginza 8-chome, successor to 'Monde Bar' (est. 1985), which held the site for three decades as a salaryman-and-gentlemen institution. Taken over in 2015 and re-licensed as Brewin'bar, then relaunched April 2024 as orca Ginza Brewery—still the only working craft brewery inside Ginza proper. Roughly ten taps of unfiltered, unpasteurized in-house beer rotate fast, about half replaced monthly, styles spanning Belgian saison through NEIPA; IBC and Japan Great Beer Awards on the wall. A French-trained sommelier-chef sends out Uruguayan ribeye, pâté de campagne, and quiche to pair with the beers and natural wine. ¥550 service charge, brewery tours on request. Sundays snacks-only.
