Grand-opened January 18, 2025 in a 70-year-old former warehouse three minutes from Kikukawa A2 exit. Owner Kobayashi-san is an ex-editor who previously worked at GORA Brewery & Grill in Hakone, and renovated the walls and floors himself; interior was designed by Mitani-san of natural wine bar sukima Hanzomon, briefed as 'a photographer renting a Tokyo shitamachi house', a direct nod to Wolfgang Tillmans's room photographs. Name comes from the French 'sabotage', the owner's invitation to skip work and drink beer instead. Eight rotating taps with an accessible bias (sours, hazies, easy-drinking styles), plus natural wine, whisky and cocktails. Periodic original brews collab-brewed at GORA, plus film-tie-in beers with neighbor mini-theater stranger. Food rotates: irregular burger nights, wild boar sausage, potato salad. Editor-curated bookshelf, new and used. Sofa, counter, tables, around 20 seats. Closed Mondays.
