'Drinkable bakery' and the sister shop to Michelin-Bib Table d'Hôte, opened July 2018 near Kayabacho Station. Owner-baker Katsuaki Higure spent a decade building his 'Higu-style high-hydration bread'—100% domestic wheat, water past 100% of flour weight, potato (Mayqueen) binding in place of eggs, dairy, butter, or additives—after being shaken by Shiga-chef's work at Signifiant Signifié in Sangenjaya and running out of kitchen space for classical methods. Daily rotation of five to six loaves: plain Kitanokaori, walnut-and-pepper-leaf tsukudani, fig, yomogi-azuki. The beer counterpart is one drink done five ways: Asahi Super Dry poured in five distinct styles by Ginza-trained artisans, plus seasonal craft guest taps. Twenty seats, bakery visible from the counter. Two-drink minimum, VISA only. Closed Sun and Mon.
