Opened Nov 2023 by Koji Onuma, the original owner of Hachimanyama curry stand NIVAL, NOVUS is his second act: burgers at lunch, bistro plates at night, and a drink list built around craft beer, natural wine, and rotating Japanese gin. The room is intentionally small—nine counter seats plus a tiny street-side terrace—so you’re basically eating at the pass. Onuma talks beer like a brewer’s rep, often pouring kegs he claims rarely leave the producer. Go early, scan the ‘special beer on tap’ sheet, and treat the food as pairing, not a side quest. If you’re pacing yourself, the bottled Coke is a tell of the vibe.
