Basement meat bar on Ginza's Chuo-dori, opened April 2012 by RAMLA Co.'s female founder after a NYC butcher's-grill scouting trip (N9Y is a pun on niku-ya, Japanese for butcher shop, styled New York). Signature 'Beer Can Chicken' is a whole bird roasted upright over an upturned can of the house brew—evaporated beer steams the cavity tender in a dedicated oven. Other anchors: Black Wagyu roast beef, the ABC Burger (avocado-bacon-cheese), Sunday roast, house prosciutto. Seven rotating taps of original craft beer from Yokohama's Ottotto Brewery, plus a 60-label wine list from a senior sommelier and world bottled beer in the fridge. Ninety-two seats across sofas and benches with sports-screen sightlines, private rooms for 4–6, buyout for 50+. ¥500 charge after 14:30.
