PHERMENT started as a Shinjuku‑Gyoen beer bar, then moved to Kuramae on July 19, 2025 as a stripped-down taproom while the new brewery build-out catches up. You’ll sometimes spot tanks through the street-facing glass, but the vibe is still in progress. The owner keeps the house beers pouring (often four of six taps) alongside a couple guest lines, served in half/pint sizes around ¥900/¥1,400. Inside is concrete, exposed piping, and one long counter—more tasting lab than pub—so big groups feel out of place. Snacks stay tight: truffle-porcini chips, smoked nuts, pork rib. Fully cashless, non-smoking, no reservations either.
