SENNE is a SAKAHACHI project (ANOTHER8 / DIG THE LINE orbit) built to blur beer and wine without turning it into a lecture. Drink lead Shungo Kimura came up through DIG THE LINE DOORS, so lambic and wild ales flow by the glass alongside a tight natural-wine roster. The name lifts from Belgium’s Senne River, lambic territory. Downstairs is a walk-in cellar stacked with roughly 10,000 bottles; upstairs a poured-in-place concrete table (about two tons) forces communal pacing. Chef Takashi Aikawa keeps the food genreless and salty enough to keep you ordering. Start acidic, then chase it with small plates.
