A Brut IPA brewed with fully ripened ume (Japanese plum) from Kamado Town, steeped during fermentation to draw out a rich, plum-wine-like aroma. Aromatic distillate made from the same ripe ume is added, layering notes of apricot, peach, and pear. Dolcita hops complement the fruit with coconut and apricot aromas, while a dry, crisp finish evokes a sparkling wine made from ripe ume.
