A German-style Pilsner brewed with Pilsner, Spitz, and Melanoidin malts, hopped with the new German variety Callista and the American Loral, and accented with Sudachi citrus juice. The result is a crisp, smooth bitterness with pleasant bread-like malt notes and honey nuances, while Callista and Loral contribute vivid passionfruit and citrus aromas. Brettanomyces works subtly in the background, promising a gentle, evolving funkiness as the beer matures over time.
