A uniquely Japanese wild ale brewed at 8% ABV using natural yeast harvested from the vineyards of Gifu winery Domaine Hisamatsu, alongside rice koji as an adjunct. The combination of wild yeast and koji unlocks aromas and alcohol levels beyond what either could achieve alone, resulting in a charming, natural-wine-like character. Expect pleasant acidity, red berry and grape-like fruitiness, and a rich, layered depth reminiscent of Belgian ales.
