A collaboration with MAHOW BREW of Naha, Okinawa, this intensely sour ale is brewed with Okinawan shikuwasa (flat lemon) and wild yeast sourced from a Gifu vineyard. The natural yeast imparts a fresh, lively acidity that is amplified by the bright, green citrus character of shikuwasa. Barley from Mizunami City gives the beer a crisp, light body that balances the puckering sourness.
